Peppermint Meltaway Cookies

These peppermint meltaway cookies are perfect for the holiday season. The cool peppermint flavour delicately permeates the dough and icing, making for a sweet and tasty holiday cookie. Top it all off with some crushed candy canes to pull it all together. These are great to bring into the office, if they make it out of your kitchen without being eaten!
Makes 25 cookies.
Ingredients - Cookie:
1 ¼ cups all-purpose flour
½ cup cornstarch
¼ tsp salt
1 cup salted butter, softened
1/2 tsp peppermint extract
½ cup powdered sugar
Directions:
Use an electric mixer to cream together the butter and powdered sugar. Mix in the peppermint extract and then add the flour, cornstarch, and salt and continue to mix until just combined. Cover the bowl with plastic wrap and chill for 1 hour, until nearly firm.
Preheat oven to 350 degrees. For each cookie, scoop out 1 tbsp of dough and shape into a ball. Place on a baking sheet lined with parchment paper, spacing cookies 2-inches apart. Bake for around 10-13 minutes, removing cookies when they are slightly brown on the bottom. Let cool before icing.
Ingredients - Icing:
2 tbsp salted butter, softened
2 tbsp half and half
¼ tsp peppermint extract
1 ½ cup powdered sugar
¼ cup crushed candy canes
Directions:
Use an electric mixer to cream together the butter, half and half, peppermint extract and powdered sugar. Spread frosting over cookies and sprinkle candy cane bits on top.
