Sweet & Savoury Wheat Wafers

Thin, savoury wafers, are just sweet enough and perfect on an appetizer tray. Wrap up for a hostess gift, either baked or as a frozen roll of unbaked wafers.
Prep Time: 15 minutes
Cook Time: 1 hour in freezer, 8 minutes to bake
Makes: 36 wafers
Tip: Keep a roll of dough in the freezer to slice and bake when the craving hits!
Ingredients - Plain Wafer Dough:
1 cup softened butter
1/3 cup sugar
1 ½ cups all purpose flour
¼ cup all purpose flour, if required
In a mixing bowl with an electric mixer beat butter and sugar until creamy, about one minute. Slowly beat in flour, and continue mixing until dough is smooth and pliable, about one minute. If the dough is too sticky, gradually beat in remaining flour by the tablespoon, until dough is cookie batter consistency.
Divide dough in half.
The following quantities are for half the recipe. Double ingredients if only one variety is desired.
Ingredients - Lemon Thyme Wafer:
1 Tbsp dried thyme leaves
2 tsp grated lemon rind
Ingredients - Jalapeno Cheddar Wafer:
1 Tbsp finely diced, seeded and veined, jalapeno pepper
½ cup crumbled, Old Cheddar cheese or other firm grated cheese
Mix each wafer combination into one half of the dough recipe until well combined. Shape mixture into a small log, about 1.5 inch in diameter. Wrap tightly in waxed paper or plastic wrap and freeze one hour, until firm.
Dough can also be completely frozen at this point, to bake at another time.
Remove dough from freezer and let stand for 15 minutes.
Preheat oven to 325°F (160°C).
Line cookie sheet(s) with parchment paper. Slice logs into ¼ inch (1 cm) thin wafers. Place 1 inch (5 cm) apart and bake 8 to 10 minutes, until firm and lightly browned on the bottom. Allow wafers to rest two to three minutes before moving to a cooling rack.
Store in an air tight container for up to 10 days, wafers freeze well.
