Baked Chicken Nuggets

These baked chicken nuggets are crispy on the outside, tender and juicy on the inside, easy to make, and make a delicious high-protein and fibre-filled meal or snack.
Ingredients:
½ cup dry breadcrumbs
½ cup finely ground high-fibre cereal, such as shredded wheat
2 tbsp ground flaxseed
1 tbsp grated parmesan cheese
½ tsp garlic powder
¼ tsp ground black pepper
1 large egg
1 lb boneless skinless chicken breasts, cut into 32 nuggets
Directions:
- Preheat oven to 400°F.
- In a medium bowl, combine breadcrumbs, cereal, ground flaxseed, parmesan cheese, garlic powder and pepper.
- In a second bowl, whisk the egg. Dip the chicken into the egg, tossing gently to coat. Transfer chicken pieces to breadcrumb mixture, pressing lightly to coat the chicken pieces in breading.
- Place chicken on an ungreased baking sheet. Repeat with remaining chicken pieces.
- Bake until cooked thoroughly, about 20-25 minutes, turning once after 10 minutes.
- Serve and enjoy!
