Baked Chicken Nuggets

These baked chicken nuggets are crispy on the outside, tender and juicy on the inside, easy to make, and make a delicious high-protein and fibre-filled meal or snack.

Ingredients:

½ cup dry breadcrumbs

½ cup finely ground high-fibre cereal, such as shredded wheat

2 tbsp ground flaxseed

1 tbsp grated parmesan cheese

½ tsp garlic powder

¼ tsp ground black pepper

1 large egg

1 lb boneless skinless chicken breasts, cut into 32 nuggets

Directions:

  1. Preheat oven to 400°F.
  2. In a medium bowl, combine breadcrumbs, cereal, ground flaxseed, parmesan cheese, garlic powder and pepper.
  3. In a second bowl, whisk the egg. Dip the chicken into the egg, tossing gently to coat. Transfer chicken pieces to breadcrumb mixture, pressing lightly to coat the chicken pieces in breading.
  4. Place chicken on an ungreased baking sheet. Repeat with remaining chicken pieces.
  5. Bake until cooked thoroughly, about 20-25 minutes, turning once after 10 minutes.
  6. Serve and enjoy!
