Wheat germ offers a nutty, and delicious boost of protein, fibre vitamin E, and folate. It’s wonderful in “no bake” recipes like this one, that preserve the nutritional quality. In the GetJoyfull kitchen we love to add it to smoothies, parfaits, salads, and popcorn!
2 cups fresh Medjool dates, pitted
2 tbsp honey (for vegan, pure maple syrup)
2 tbsp coconut oil, melted
1 tsp vanilla
1/3 cup nut or seed butter
1/3 cup wheat germ
1/3 cup unsweetened Dutch cocoa powder
1/4 cup unsweetened flaked coconut
1/2 tsp ground cinnamon
1/2 tsp salt
- Soak pitted dates in ½ cup warm water for 15 minutes. Drain water.
- Add soaked dates, honey, and vanilla to food processor, and pulse to puree dates.
- Add remaining ingredients, and pulse until uniform dough forms.
- Chill dough in refrigerator for for 15 minutes. Roll into bites, and roll again in your favourite garnish. We love cocoa, coconut, matcha powder, and icing sugar.
