Protein Packed Peanut Butter Banana Bars

Do your wallet and your family’s taste buds a favour and ditch the chalky grocery store protein bars. This recipe combines oats, flour, flax, peanut butter, honey and bananas with the protein powder of your choice to create a tasty bar. Perfect for breakfast or a busy day out. This wholesome combination of ingredients is easy on the stomach but ready to power through a hectic Monday morning or a long day at hockey camp.
¼ cup whole wheat flour
1 cup protein powder of your choice
2 cups quick cooking oats
1 tablespoon ground flax seed
1 cup peanut butter
¼ cup honey
2 ripe bananas
- Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
- Spread oats out onto an unlined baking sheet in a thin layer. Place in oven and toast until lightly browned, around 10 minutes. Remove and allow to cool.
- Mix cooled oats, protein powder, flour and flax until combined, then mix in with peanut butter and honey. Mash the bananas into the mixture, stirring until combined. Press the resulting dough onto the parchment-lined baking sheet in a ½-inch layer.
- Bake in the preheated oven until the edges of the dough are golden brown, around 15 minutes. Cut bars while warm then allow to cool. Wrap cooled bars in plastic wrap and refrigerate until ready to use.
