Italian Turkey Meatball Subs

Meatball subs are always a family favourite! The turkey meatballs in this recipe come together quickly for an easy weeknight supper. If meal prep interests you, try making a double or triple batch of meatballs on the weekend and freeze them in an airtight container for an extra quick family meal ready in no time.
Ingredients:
1 lb (454 g) ground turkey
½ cup Italian-style dry breadcrumbs (may substitute plain)
2 cloves minced garlic
1 cup sliced fresh spinach
1 large egg, beaten
¼ tsp dried oregano
¼ tsp dried basil
¼ tsp red pepper flakes (optional)
¼ tsp salt
¼ tsp pepper
6 (6-inch) sub buns, split lengthwise
1½ cups jarred marinara sauce (or homemade)
1 cup shredded mozzarella cheese
Directions:
- Preheat oven to 400⁰F.
- In a large bowl, combine turkey, breadcrumbs, garlic, spinach, egg, oregano, basil, red pepper flakes, salt and pepper. Mix until combined. Form mixture into 18 meatballs and transfer to nonstick foil-lined (or parchment paper-lined) rimmed baking sheet.
- Bake until browned and internal temperature of meatballs reaches 165⁰F, about 15 minutes. Transfer meatballs to a plate. Discard foil or parchment paper.
- Place buns on same baking sheet and add 3 meatballs to the centre of each bun. Top each sandwich with marinara sauce and mozzarella cheese, dividing equally.
- Bake until sauce is hot, and cheese is melted, about 5 minutes.
- Serve and enjoy!
