Mini Shell Pasta with Sausage, Kale and Sundried Tomatoes

Make it a pasta night in just over 20 minutes with this easy Italian sausage pasta. The kale and sundried tomatoes add great flavour and essential nutrients, making this family-friendly pasta good for you and your tastebuds.

Ingredients:

1 cup mini shell pasta

3 mild or spicy Italian turkey sausages, cut into ½ inch pieces

1 tbsp olive oil

4 cloves minced garlic

4 cups chopped kale

8 sundried tomatoes packed in oil, drained and patted dry, thinly sliced

½ cup no-salt-added chicken broth

2 tbsp fresh lemon juice

3 tbsp fresh grated Parmesan cheese

Directions:

  1. Cook shell pasta in boiling water according to package instructions. Drain and set aside to keep warm.
  2. Meanwhile, cook sausage in a large non-stick frying pan over medium-high heat until browned and cooked through, about 5-7 minutes. Transfer cooked sausage to a plate and set aside.
  3. Reduce heat to medium and add oil. Add garlic, kale and sundried tomatoes. Cook, stirring, until kale is beginning to wilt, about 3 minutes.
  4. Add broth, sausage and lemon juice and bring to a boil. Add cooked pasta to pan and stir to combine. Top with Parmesan cheese. Season to taste, if desired.
  5. Serve and enjoy!
