Pierogies are one of the perfect comfort foods. Craving savoury? Craving sweet? Pierogies fit the bill no matter how you choose to fill them.

This savoury recipe combines potato and onion for a classic flavour. Perfect paired with kielbasa or on their own, the work you invest into these homemade pierogies will pay off as soon as you take the first bite. Ditch the store bought bags and get moving on this homemade version featuring Life’s Simple Ingredient.

Makes 3 dozen pierogies.

Life's Simple Ingredient Pierogies

Ingredients - Dough:

2 ½ cups flour

¼ tsp baking powder

½ tsp salt

1 cup boiling water

¼ cup butter

Directions:

Combine butter and boiling water. Add in flour, baking powder and salt. Mix all ingredients together and knead until smooth.

Ingredients - Filling:

4 potatoes

¼ of an onion

1 tbsp canola oil

¼ cup butter

Salt & pepper to taste

Directions:

Chop onion finely. Add canola oil to chopped onion and microwave for 1 ½ minutes. Add onion mixture to boiled potatoes along with butter and salt & pepper. Mash everything together.

Pierogie Preparation:

Roll dough to 1/8 inch thickness on lightly floured surface. Cut dough into 3 inch rounds. Take each round, stretch it out slightly and spoon 1 tbsp of filling into the middle. Fold the dough over the filling and pinch the edges together to seal. Repeat with remaining dough and filling.

Place pierogies in a pot of boiling water and boil until they float to the top. Remove with a slotted spoon.
