Pumpkin Pie Waffles

Thanksgiving may have come and gone, but why wait until the next holiday gathering to get your pumpkin pie fix? Enjoy the festive taste of pumpkin pie whenever you want with this pumpkin pie waffles recipe, topped with sweet maple syrup and an added crunch from your favourite nut (we recommend walnuts or pecans).
Ingredients:
1 cup whole wheat flour
1 tbsp cornstarch
1 1/2 tsp baking powder
1/2 tsp baking soda
1 tsp pumpkin pie spice (if you don’t have, sub ½ teaspoon nutmeg, ½ teaspoon ground ginger, ¼ teaspoon ground cloves)
3/4 tsp ground cinnamon
1/4 tsp salt
1/2 cup pumpkin puree (not pumpkin pie filling)
1 large egg
1 tsp vanilla extract
1 cup milk of choice
Oil spray, for waffle iron
Directions:
- Preheat waffle iron.
- Add dry ingredients to a large bowl and whisk to combine.
- In a separate large bowl add wet ingredients and mix until smooth.
- Add dry ingredients to wet ingredients, mixing until just combined.
- Spray waffle iron with non-stick cooking spray and cook according to waffle iron directions (about 3-4 minutes).
Makes 2 large Belgian waffles. Top with maple syrup, honey or whipped cream and your choice of nut.
