Veggie Mac ‘N’ Cheese

How do you liven up plain old Mac N Cheese plus add a little veggie flair? Too easy! This recipe sneaks in fibre and nutrients thanks to some pureed vegetables. Combined with wheat pasta, you have a dish that not only satisfies hungry kids, but moms concerned about their kid’s veggie intake. Feel free to play with the vegetables included, but if your kids are picky about colours remember to stick to pale or orange vegetables to keep them well hidden. Substitutions could include parsnips, acorn squash, sweet potatoes, or roasted orange bell peppers.

Ingredients:

1 pound macaroni, cooked

½ cup water

1-2 cups cauliflower florets

1-2 cups butternut squash, diced

1-2 cups carrot, sliced

2 cups milk

2 cups cheddar cheese, shredded

4 ounces cream cheese

Directions:

  1. Add water and vegetables to a pot over medium heat. Cover and cook until vegetables are tender.
  2. Once cooked, pulse contents of pot in a blender until smooth.
  3. Return vegetable blend to the pot, turn the heat to medium, add milk and both cheeses. Stir until it smooths out.
  4. Add macaroni, reduce heat and cover for 20 minutes.
